Have you ever wanted a satisfying treat but not wanted to break the scale? I tried making this recipe but didn't have all the ingredients so I improvised. Here's the version I cam up with and I have to say, It was pretty good. I hope you enjoy it too.
2 T coconut flour
1 T almond flour
- 2 T swerve
1/2 tsp baking powder
1/4th to 1/2 drop cinnamon essential oil
1 large egg white (can sub for 1 large egg or 1 flax egg)
1 T + dairy free milk of choice** (I used almond creamer)
Cinnamon for dusting
Swerve for dusting
For the microwave version
In a small mixing bowl, combine the flours, sweetener, cinnamon essential oil and baking powder in mix well.
Add in your egg white, avoccado, dairy free milk or almond creamer and mix until fully incorporated.
Microwave for 90 seconds (or up to 2 minutes, depending on your microwave) and remove. Sprinkle with extra cinnamon and swerve, if desired. Enjoy immediately.
For the oven version
Pour batter into an oven safe dish and bake at 350 for 12 minutes, or until a toothpick comes out clean.
