Indian Breakfast Bowl

Every where I turn I am seeing recipes for Indian foods and it’s really got me craving some now.

I poked around on the internet and found lots of terrific recipes. I love breakfast any time of day and decided this would be the dish I try. I modified it to please my pallet and hope you enjoy it too. 

 

Ingredients: 

1 tsp olive oil

 

1 Turkey Sausage link cut up

1/2 medium onion, sliced

1/2 bell pepper, sliced

1 serrano pepper, diced 

1/4 cup mushrooms, cleaned and sliced

1 roma tomato, diced

1/2 cup spinach, chopped

1tooth pick dip of cilantro essential oil

1tooth pick dip of cumin essential oil

1tooth pick dip of oregano

1 egg

1 tbsp plain yogurt

salt and pepper to taste

Instructions:  Heat oil in pan on medium-high and add onions, bell peppers and Serranos and saute until softened and slightly browned. Add sausage and mushrooms, cook for about 5-7 minutes or until browned to your liking. Add tomatoes and spinach and cook for a couple of minutes until tomatoes are cooked through and spinach is wilted, season to taste and put in a bowl Fry egg in pan until whites are just set and add to bowl. Add cumin, cilantro and oregano dips to plain yogurt spoon onto egg. Enjoy!
